ちょっとしたお酒の席にちょうど良い（2.3人分）天たつのお酒の肴を少しずつ詰合せしました「ちょい飲み酒肴詰合せ」のご紹介です。
中に入ります「甘海老うに漬け」は福井で取れた甘海老を甘目に調味した日本三大珍味の一つ「越前仕立て汐雲丹（しおうに）」に漬け込んだ贅沢なお酒の肴です。
「ふぐの子粕漬け」はふぐの卵巣を2年以上糠につけ毒を分解し他ものをさらに粕につけてマイルドな味わいにしたもの。「焼きへしこ」、「焼きいかへしこ」、は鯖、イカを1年間糠につけて発酵させ作る「へしこ」を切り身にし焼いたもの。塩辛さの中に深い旨味があります。
「いか黒作り」はイカの塩辛の中にイカの墨を入れコクのある塩辛に仕上げた北陸独特の塩辛です。「かに身ふりかけ」はズワイガニの身をほぐして味付けをし半乾燥させた珍味。
2,3人で食べるのにちょうど良い量かと思います。
どちらも袋をあけてそのままお酒の肴としてお召し上がりいただけます。
こちらの「ちょい飲み酒肴詰合せ」をレポートするためにお酒と一緒にいただきました
お酒は緑の一本義こと「一本義金印」。
勝山の酒造一本義久保本店の普通酒ではあるのですが、こちらでつくる燗酒はほっとするお味で大好きです。
お酒を温め、いざ酒の肴とご対面。
さすがに肴が6種あると迷うので絞りまして「甘海老うに漬け」「黒作り」「焼きいかへしこ」をいただきました。
甘海老うに漬けは甘海老の甘みがしっかりと残りつつ、汐雲丹の濃い旨味と磯の香りを併せ持ち口の中にぶわーっと旨味が広がります。
そこに熱いお酒を流し込むと、はぁー、美味い。
黒作りは口に入れた時の旨味とかみしめた時の旨味が違います。
口にいれたときは熟成した塩辛の塩辛さと旨味に加えてイカ墨のコクを感じます。
そして身をかみしめるとイカの甘みを感じる。
熟成させるために何日もおいているのにイカの甘みを感じる不思議。
そこにまた熱いお酒を流し込むと、やはり、美味い。
最後の焼きいかへしこ。
一年間糠につけて発酵させたその旨味は抜群です。
塩辛さもあるのですが、それよりもイカの旨味と発酵が醸す旨味で口の中によだれがあふれてくるのを感じます。
もぐもぐよく噛みしめたところで熱いお酒を流し込むと、最高に、美味い。
その夜は美味いお酒と肴のある土地に心より感謝いたしました。
