2015年の「ずぼがに」漁の解禁が２月１日からとなっており、解禁まであと二日、ただ今天たつにてご予約承りしております。
「ずぼがに」は福井で食べられる独特のズワイガニです。
福井で有名な蟹といえば「越前蟹（えちぜんがに）」。
こちらも福井の海で取れたズワイガニの事なのですが、「ずぼがに」はズワイガニが脱皮して間もない若いズワイガニの事を言います。
ズワイガニは何度も脱皮を繰り返して体が大きくなっていきます。
その脱皮直後はまだ殻が薄く、身も殻の大きさに追いついておりません。
殻の継ぎ目もまだしっかりとしていないため、塩水でゆでるとミソが流れ出てしまうため「ずぼがに」には頭がつかず足だけの販売となっています。
この「ずぼがに」は殻が薄いため手で簡単に折れます。
バキっと殻を豪快に折って、引き抜くと殻に身の大きさが追い付いていないのと水分を多く含んでいるためズボッと身が抜けます。
この小気味よく身が抜けるさまが「ずぼがに」の名前の由縁でもあります。
味わいはとってもジューシーで甘みが多く、お酒の肴としてもご飯と一緒でも美味しい蟹。
この時期限定になりますので皆様にもぜひ味わっていただきたい一品です。
私も個人的に２月１日の解禁日が大変楽しみなんです。
「ずぼがに」をより美味しくいただくために、ただ今福井の美味しい地酒を品定め中。
この待っている時間も楽しみの一つなんですよね。
最高のお酒が用意できて、旬の「ずぼがに」を口いっぱいに頬張りよくよく味わって飲み込んだ後に、燗のお酒を飲む。
